The chemistry of drying: The pungency of dry ginger is entirely different from fresh ginger. The primary pungent compound in dry ginger (shogaol) is actually formed during the dehydration process as heat and time break down gingerols. Should I buy bleached or unbleached ginger?

It depends entirely on your market. Bleaching (coating the ginger in lime) gives it a clean, cosmetic white appearance, which is preferred in domestic Indian and some Gulf markets. However, the lime coating reduces the volatile oil percentage. EU, US, and strict processing markets heavily prefer unbleached ginger (NUGC/NUGK) for maximum flavor and clean labelling.
